- 2 cebollas medianas
- 3 pechugas de pollo
- 2 ramas apio (opcional)
- 6 huevos
- aove
- Sal

- Primero pelo las zanahorias con un pelador y le quito la piel a las cebollas.
- Corto el apio a trozos con la mano quitando las hebras.
- Corto las zanahorias a rodajas gruesas y pico las cebollas.
- Las pechugas las corto a trocitos con unas tijeras.
- Pongo al fuego una olla grande con un buen chorro de AOVE.
- Rehogo en la olla las zanahorias, el apio, la pechuga y la mitad de la cebolla con un poco de sal.
- En una sartén rehogo la otra mitad de la cebolla picada y la reservo.
- Y en una olla pequeña pongo a hervir 6 huevos.
- Cuando la pechuga ya no se ve cruda, lleno la olla con agua y dejo que hierva hasta que la zanahoria se deshace al pincharla con un tenedor.
- TRUCO: Para que el caldo quede espesito, con sustancia y color y la pechuga desmechada, le paso la batidora en la misma olla a pequeños golpes. No dejar la batidora en marcha todo el rato porque en vez de desmechar, se hará puré. Yo dejo trozos enteros también, pero puedes darle a todos si lo prefieres.
- Como yo uso este caldo para varias comidas hago los fideos en un cazo a parte. Si vas a servir toda la olla puedes hacer los fideos en la misma agregando un puñadito por persona. Yo pongo en el cazo las raciones de caldo que vaya a consumir, en mi caso somos dos, con un puñadito de fideos que quepa en mi mano por ración al fuego y en 2 o 3 min ya están hechos.
- Reparto el caldo con fideos en platos hondos. Si es necesario añado caldo de la olla grande también.
- Por encima le pongo un poquito de la cebolla rehogada en la sartén y un huevo duro cortado a trocitos sobre el plato y listo!! 👌
