  1. 1,5 kg pechuga de pollo cortada en dados
  2. 800 g zanahoria
  3. 5 cebollas
  4. 250 g champiñones laminados
  5. 400 g salsa de tomate casera (mirar receta en mi perfil)
  6. 2 cucharadas curry en polvo
  7. 1 lata leche de coco
  8. Sal
  9. Aceite de oliva

Instructions to make to make Pollo al curry

  1. En una sartén, agregamos un buen chorro de aceite de oliva, y salteamos ligeramente el pollo (solo que coja un poco de color, el interior debe seguir crudo). Reservamos.
  2. Pelamos y cortamos las zanahorias en rodajas finas, y la cebolla en tiras gruesas.
  3. Añadimos aceite de oliva a un caldero, ponemos a fuego medio/alto. Luego agregamos la cebolla y las zanahorias, y salamos ligeramente. Removemos de vez en cuando para que se hagan todas las verduras. Unos 15 minutos aprox.
  4. Cuando las verduras estén pochadas, añadimos la salsa de tomate casera, (si no tienes, puedes sustituirla por una lata de tomate natural troceado). Lo dejamos unos 5 minutos más a fuego medio/alto, mientras mezclamos todo bien.
  5. Añadimos dos cucharadas de postre de curry en polvo, y seguimos mezclando.
  6. Incorporamos el pollo, que previamente habíamos salteado, y reservado al principio. Mezclamos junto al resto de ingredientes.
  7. Ahora añadimos el truco definitivo, para que nos quede una comida bestial, y que nos va a dar una cremosidad increíble a nuestra receta. Este no es otro que la lata de leche de coco, y volvemos a mezclar todo muy bien. Dejamos cocer todo alrededor de 12 minutos a fuego medio/alto (hasta que las zanahorias estén tiernas).
  8. Cuando la comida está prácticamente hecha, añadimos los champiñones laminados, bien lavados, y dejamos cocinar 5 minutos más.
  9. Comprobamos el punto de sal y de curry, y añadimos un poco más de los dos ingredientes a nuestro gusto.
  10. Puedes adecuar las cantidades a tus necesidades, yo hago siempre bastante cantidad, para guardar en tupper y/o congelar.
