- 800 ml. agua

- Ponemos a calentar una olla con el agua y el avecrem hasta que este se disuelva. Una vez haya hervido bien, bajamos el fuego. No lo apartamos porque necesitamos tenerlo caliente.
- Picamos la cebolla y el ajo.
- Pochamos la cebolla en una cazuela o sartén honda.
- Cuando la cebolla esté lista añadimos el ajo y las setas. Sofreímos unos 10 min. Salpimentamos teniendo en cuenta la sal del caldo que se añadirá después.
- Añadimos el arroz a la cazuela o sartén y lo mezclamos con el sofrito unos minutos. A continuación añadimos el vino blanco y removemos hasta que el arroz lo absorba.
- Añadimos la mitad del caldo caliente y vamos removiendo. Según se vaya absorbiendo vamos añadiendo el caldo sin para de remover. Estará listo en unos 25 min.
- Rallamos el queso para añadirlo al arroz cuando esté hecho. En este momento podemos añadir también la cucharada de mantequilla. Removemos muy bien y servimos en el momento.
